Is the business rationale of "catering to the audience" justified, or does the industry perpetuate racism?

Besides the stereotypical martial arts movies, Asians do not get the serious dramatic roles in North American. The upcoming movie "21" was based on Asian-American students at MIT, and "Starship Troopers" was originally written with a Filipino main character, but Hollywood changed these scripts and casted white actors instead.
